1. Ingredients for Making Coconut Jam
Young coconut flesh: 1 kg
Sugar: 400g
Unsweetened fresh milk: 100g
Vanilla: 1 tube
Coloring ingredients: Coconut leaves, turmeric starch, coffee, cocoa, beetroot, carrot
2. How to Cook Coconut Jam
Step 1: Prepare the Coconut
Cut the coconut into 4 parts and use a scraper to shred the flesh into small, bite-sized pieces. You can leave the coconut flesh whole or cut it into small strands according to your preference. If you enjoy shaping your food, you can use cookie cutters to create different shapes for the coconut jam.
Next, rinse the prepared coconut flesh with cold water until it turns translucent, then boil it for 1 to 2 minutes. After that, remove the coconut and let it drain.
Step 2: Marinating the Coconut
First, marinate the coconut with 400g of sugar for 4 to 5 hours to allow the coconut to absorb the sugar. Additionally, to create various colors for the coconut jam, you can marinate the coconut using the following methods:
- Green color: Use chopped pandan leaves and a little distilled water, then blend them together. After blending, strain the mixture to extract pandan juice and marinate it with the coconut.
- Yellow color: Dissolve turmeric starch in warm water and marinate it with the coconut. Be careful not to use too much turmeric starch as it may affect the taste of the coconut jam.
- Brown color: Add 1 to 2 small coffee spoons or finely ground cocoa and soak them with the coconut. Similarly to turmeric starch, avoid excessive use of these two ingredients as they can make the coconut jam bitter.
- Purple color: Chop the beetroot into small pieces and blend them with some water, then strain to extract the juice to marinate with the coconut.
- Red color: Chop the carrot into small pieces and blend them with water similar to pandan leaves and beetroot, then squeeze to extract the juice to soak with the coconut
Step 3: Cook the coconut jam
After completing the marinating stage, heat a pan on the stove, wait for it to heat up, then add the coconut and stir evenly (Note to keep the heat low). Wait until the sugar starts to caramelize, then add the unsweetened milk and vanilla extract, and continue stirring until the coconut jam is dry and well-coated with the flavorings. Turn off the heat and pour the coconut jam out.
