Ingredients:
- Pomelo peel (choose peel that's not too old or dry)
- Sugar, salt
- Citric acid
- Stainless steel pot
- Non-stick pan
How to make pomelo peel preserves with a non-stick pan:
Step 1: Prepare the ingredients
- Cut the pomelo peel into long pieces about 5 cm, remove the white pith
- Dissolve salt in water and soak the pomelo peel in salt water for about 7 hours

- After soaking for enough time, take out the pomelo peel and squeeze it several times with water to remove excess oil and bitter taste from the peel
- Rinse thoroughly several times, then drain in a basket

Step 2: Boil the pomelo peel
- Put the prepared pomelo peel into a stainless steel pot

- Add water and 1 teaspoon of citric acid into the stainless steel pot (citric acid helps increase crispiness)
- Boil the prepared pomelo peel for about 3 – 5 minutes
- Drain the pomelo peel in a basket and rinse thoroughly with clean water to remove the citric acid flavor (you can gently squeeze the pomelo peel to remove excess water)
- Let it drain
Step 3: Soak in sugar
- Put the pomelo peel into a large bowl
- Add sugar and mix well, then soak for about 5 hours for the sugar to penetrate into the pomelo peel
Step 4: Sun dry
- Put the pomelo peel in a pan and stir over gas stove until the water is almost dry

- Reduce the heat, continue stirring until the pomelo peel becomes dry and the sugar crystallizes white, sticking around the pomelo peel, then turn off the stove.
