Pillow cakes are a popular snack, especially among students. The key to a successful pillow cake lies in its perfectly crispy yet soft exterior, filled with a delicious mixture of vegetables and meat. Ingredients:
- Ground pork: 300 grams
- Peeled and deveined shrimp: 200 grams
- Carrots: 2 pieces
- Bean sprouts: 200 grams
- Shiitake mushrooms: 100 grams
- Pillow cake shells: 400 grams (store-bought)
- Chicken eggs: 2 pieces
- Quail eggs: 20 pieces
- Dried vermicelli: 100 grams
- Dried shallots, garlic, spring onions, seasoning, pepper seeds
How to make pillow cakes:
Step 1:
- Peel and wash carrots, then finely shred (leave about half for dipping sauce)
- Soak dried shiitake mushrooms in warm water until soft, then finely chop. Cut bean sprouts into 2 cm lengths. Peel and finely chop shallots and garlic.
- Soak vermicelli in cold water for about 10 minutes, then remove and cut into 3 cm lengths
- Wash and finely chop spring onions.
- Wash quail eggs and boil until cooked, then peel and set aside in a separate bowl.

Step 2:
- Mix all the ingredients together. With the specified quantities, add 2 tablespoons of seasoning salt, 1 tablespoon of MSG, and 2 teaspoons of ground pepper.
- Use chopsticks or nylon gloves to evenly mix the ingredients and seasoning until well combined.

Next, sauté the pillow cake filling briefly until cooked through.
Place the pillow cake wrapper on a flat surface, scoop 1 spoon of filling into the center of the wrapper, and add 1 quail egg (optional).
To prevent the pillow cake filling from falling out, crack an egg into a bowl, whisk until well beaten, and spread it on the edge of the wrapper before folding to shape (Water can be used instead of eggs). Repeat until all wrappers and fillings are used.

Heat a pan on the stove, add enough oil to submerge the pillow cakes. Bring the oil to a boil.
Once the pillow cakes are wrapped, drop them into hot oil and fry until the outer layer turns golden brown, indicating they are cooked.

A tip for making delicious dipping sauce is as follows. First, mix water with sugar, squeeze lime juice, taste it to be slightly tangy like regular lime water. Then, slowly pour fish sauce, taste to suit your preference. Finally, add finely chopped garlic, onions, thinly sliced carrots, and a few slices of chili to complete the dipping sauce.
Arrange the pillow cakes on a plate with a bowl of dipping sauce on the side, use scissors to cut the pillow cakes into 2 or 3 pieces for easy eating.
