- 400g of chicken
- 200g of vermicelli noodles
- 100g of white turnip
- 100g of carrot
- 100g of bean sprouts
- 60g of purslane
- Spices: star anise, coriander seeds, cloves
- Seasonings: bouillon cubes, salt, MSG...

Step 1: Prepare Ingredients
- Clean the chicken thoroughly with salt and water. Then, place it in a pot of water to boil until cooked through.
– Soak the vermicelli noodles in hot water for 10 minutes, then drain.
- Peel and wash the white turnip and carrot, then slice them into bite-sized pieces.
- Wash the purslane thoroughly and let it drain.
- Take about 3 strands of saffron, 2 tablespoons of coriander seeds, 2 teaspoons of cloves, lightly roast for about 5 – 10 minutes until fragrant, then wrap in a clean cloth and tie tightly to prevent the ingredients from falling out.
Step 2: Making Chicken Vermicelli
- Place the chicken in a pot with about 3 liters of water, along with the saffron, coriander seeds, and cloves, then simmer for about 1 hour. Then season the broth with 2 tablespoons of MSG, 3 tablespoons of salt, and 3 tablespoons of bouillon cubes to taste. Once the chicken is cooked, remove it to cool, then chop or shred the chicken into bite-sized pieces.


– Then add the white turnip and carrot to the chicken broth, season to taste for about 10 minutes. Next, blanch the vermicelli in boiling water, then transfer to a bowl, ladle the broth over it, garnish with some purslane on top for decoration and enjoyment.
