Ingredients:
– 20g of Shiitake mushrooms
– 100g of white radish, 100g of carrots
– 2/3 ear of corn, 20g of chives, 100g of bean sprouts

– 300g of rice noodles

Step 1: Preparing Ingredients
– Peel and wash carrots, white radish, score along the length of the radish to create flower-like shapes, then slice into beautiful thin slices.
– Wash corn and cut into bite-sized pieces, then drain.
– Soak shiitake mushrooms, wash thoroughly, cut off the stems, then drain.
– Wash tofu, cut into bite-sized pieces, then drain.

– Blanch the rice noodles in boiling water with a little salt for about 1 – 2 minutes until partially cooked, then drain.
Step 2: Preparing Vegetarian Hu Tieu
– Heat up a frying pan with oil, fry the tofu until both sides are golden brown, then transfer to a plate to drain excess oil.

– Once you have prepared all the necessary vegetables, put about 3 liters of water in a pot, season with rock sugar, and add all the vegetables to simmer. Note that when the water boils, reduce the heat to avoid excessive evaporation and ensure the vegetables soften properly.

– Place the Hu Tieu noodles in a bowl, you can add fried tofu and bean sprouts on top. Add the vegetables and pour in the broth, add a little pepper, and you're ready to enjoy.
