

After thoroughly cleaning the chicken, rinse it well and let it dry. For quicker marination, you can pierce the chicken skin multiple times with a skewer. Cut ginger into slices and stuff a few slices of ginger and spring onions into the chicken cavity. Place the whole chicken in a large plastic bag and refrigerate it in your familiar fridge compartment for about 3 hours. Then, finely chop dried shallots and mix with soy sauce, sugar, salt, peppercorns, and vegetable oil.
Chop the shallots and garlic, mix with fish sauce, turmeric water, honey, salt, pepper, chili powder, and vegetable oil to make a chicken marinade.

Choose the thigh part of the chicken, wash it thoroughly, and let it drain.
Rub the marinade evenly onto the chicken and marinate for about 4 hours.

Add 2 tablespoons of vegetable oil to the electric rice cooker. Spread ginger slices and the remaining spring onions evenly over the bottom of the cooker. Next, place the chicken in the rice cooker with the skin side down. Drizzle the remaining marinade over the chicken.
