Ingredients for a serving of soup for 4 people
- 1 ripe tomato
- 200g tender pork ribs
- 3 ripe tamarinds
- 100g fresh dandelions
- 1 bunch of coriander or Chinese parsley
Method:
Step 1: Purchase ribs, chop into small pieces, wash thoroughly, then put into a pot, add prepared water, parboil briefly. Discard the first boiling water, then simmer again. At this point, add tamarinds to simmer together with the ribs.

Step 2: While simmering the ribs, prepare the other ingredients:
+ Clean tomatoes, slice them
+ Peel and chop dandelions, rinse thoroughly, then squeeze with salt to soften and prevent itching when eating (For this step, it's advisable to use gloves to avoid itching hands)
+ Rinse dandelions again with water.
+ Remove the roots of coriander, rinse well, and chop finely
Step 3: Once the ribs are cooked, remove the tamarind to a separate bowl, then add dandelions and tomatoes, season to taste

Step 4: When the soup is ready, before serving, spoon out the tamarind into a bowl and remove the seeds, then return the tamarind pulp to the soup pot, stir to dissolve the tamarind flavor into the soup. Then ladle into bowls, sprinkle coriander on top, and enjoy.
Note: How to prepare dandelions without itching
- Purchase dandelion greens, wash them thoroughly, remove the tough outer parts like peeling a banana. Then use a knife to cut out the entire belly part of the dandelion (the curved inside part).
- After removing the outer green skin, cut the dandelion into bite-sized pieces, sprinkle a tablespoon of fine salt and massage evenly. It's advisable to wear gloves, if gloves are not available, for safety, mix the dandelion with salt and let it sit for 15 minutes.
- It's recommended to slice the dandelion because it's very tender and watery, slicing makes it easier to squeeze and absorb seasoning. Soaking in saltwater also helps reduce itching.
- Add cold water to the bowl of salted dandelions, rinse thoroughly, gently squeeze with your hands to drain excess water. You should use nylon gloves to squeeze the dandelions. At this point, the dandelions will shrink to about 1/4 of their original size.
- Soak the dandelions twice in heavily salted water then rinse several times with cold water, ensuring no itching remains.
