Summer is here, and what's more delightful than indulging in smooth, sweet caramel that melts in your mouth wherever you go.
Usually, caramel is made using an oven, but fret not if you don't have one. Pasgo cuisine will guide you through an alternative method to ensure you still enjoy perfectly smooth, delectable caramel every millimeter of it.
Ingredients for Lemon Caramel:
- 3 chicken eggs
- 200ml unsweetened fresh milk
- 3 teaspoons sweetened condensed milk
- 2 teaspoons granulated sugar
- 4 ripe limes (note: choose limes with wrinkled skin for better flavor)
How to make lime caramel:
Step 1:
Separate egg yolks, add 3 teaspoons sweetened condensed milk, 200ml fresh milk, mix thoroughly and gently until the eggs dissolve completely. Be sure to stir gently to avoid foaming (otherwise, the caramel will be porous due to air bubbles). Then strain through a sieve to get a smooth mixture!
Step 2:
Add sugar to the pot, pour water just enough to cover the sugar surface, turn on low heat, simmer until the sugar turns honey-colored and slightly bubbly.

Step 3:
Peel the limes, use a juicer to extract the juice and remove the seeds. For a visually appealing touch, add a few lime pieces to the bottom of each caramel glass.
Step 4:
Now, add a few drops of lime to the beaten sugar, pour it into the bottom of the glass, wait for the sugar to dry a bit, then add the egg and milk mixture made in step 1. Be careful to pour gently so the sugar and milk don't mix.

Step 5:
Now, it's time to steam the caramel. If you have an oven at home, place it in the oven at 150̊C for about 35 minutes.
If you don't have an oven, add water to the pot and steam it. During steaming, make sure to regularly check and wipe off excess water on the lid surface to prevent water droplets from spoiling our caramel.

Steaming takes about 15 to 20 minutes to complete.
Now, take out the caramel, let it cool, then place it in the refrigerator.
When serving, take another plate, invert the caramel mold to release the caramel. Now, add a few tablespoons of lime water for extra allure, and invite everyone to enjoy.
