Choosing the Freshest Octopus

Wondering how to tell if octopus is fresh? Here's a tip: fresh octopus has smooth, shiny skin and vibrant color. Flip it over, and if you see the underside or the tentacles are bright white, it's fresh. When soaked in water, it should turn slightly golden – you can see this right away.

The staff at Octopus King will also show you how to check if the octopus is fresh. Octopus that's gone bad or contaminated with chemicals often has a dull color. When touched, it should feel soft and slightly squishy, not slimy, with no foul odor or cloudy appearance.

Preparing Octopus Before Cooking:
When you bring octopus home, clean it by rubbing it with white wine, ginger water, and salt to remove any sliminess and fishy odor. Remove the bile sac (it's bitter) and gut if necessary. Then, proceed with the specific cooking method for your dish.
Ginger Steamed Octopus
Ingredients:
Octopus: 300g; 1 piece of ginger, spring onion, spices: salt, garlic, sugar, chili
Instructions:
Step 1: Remove the bile sac of the octopus, rub with salt to remove the fishy odor and sliminess, then rinse with water.
Step 2: Clean and slice the ginger and spring onion into strips.

Step 3: Place the octopus in a steamer, add ginger and spring onion around it (leave the whole octopus intact to ensure it's crispy and sweeter when steamed). Once the octopus turns a darker color, it's cooked. Remove it from the steamer onto a cutting board and slice into bite-sized pieces.

Step 4: Prepare the dipping sauce
Finely chop garlic and chili, mix with sugar and crush evenly, then transfer to a bowl. Add fish sauce and filtered water to taste. Now you have a fragrant and crispy ginger-steamed octopus dish that pairs perfectly with rice.

Stir-fried Octopus with Vegetables
Ingredients:
Octopus: 300g; 1 onion, 1 tomato, ½ piece of ginger, celery, 3 cloves of garlic, spices
Instructions:
Step 1: Clean the octopus, remove the bile sac, gut, and eyes, then pat dry and cut into bite-sized pieces. Step 2: Heat the stove, sauté ginger and garlic until fragrant, then add the octopus and stir-fry until cooked through.

Stir-fried Octopus with Vegetables
Then continue stir-frying the vegetables. Once the vegetables are cooked, pour them back over the octopus, mix well, turn off the heat, and serve. Additionally, grilled octopus with satay sauce or octopus dipped in vinegar for hotpot are also incredibly delicious. Wishing you all success!
