Step 1: Open the SMS conversation on your iPhone and select Recipient Info (1). Then, choose Conversation Route

2. How to switch between physical SIM and eSIM for SMS on iPhone

Step 1: Open the Messages app and delete the conversation you want to switch the SMS SIM for by Swiping left => Trash => Delete.
Step 2: Then, select the New Message option and enter the recipient's phone number in the To field.
