Ingredients:
- 2kg small vermicelli noodles
- 600g pork shoulder (or pork loin, thigh)
- 100g peanuts
- 1 teaspoon dark soy sauce.
- 5 spring onions
- Fresh vegetables: lettuce, bean sprouts, cucumber
- Shallots, garlic cloves: finely chopped
Instructions:
- Wash the pork thoroughly, then slice it lengthwise into thin, approximately 4cm wide pieces. Marinate with 1 teaspoon of chopped shallots, 1 teaspoon of chopped garlic, 1 teaspoon of dark soy sauce, half a teaspoon of pepper, half a teaspoon of sugar, 1 teaspoon of MSG, half a tablespoon of fish sauce, 1 tablespoon of sesame oil. Marinate for at least 30 minutes.
- Wash and drain the vegetables. Cut them into small, bite-sized pieces as desired.
- Rinse the bean sprouts.
- Thinly slice the cucumber, then cut it crosswise into small pieces.
- Roast the peanuts with a pinch of salt until golden. Remove the skins. Crush lightly.
- Prepare the shallot oil: finely chop the spring onions, then place them in a pan with a little oil and simmer until fragrant.
- Skewer the meat onto skewers or arrange on a grill tray, grilling over low heat until cooked and evenly golden. Once cooked, brush the shallot oil over the meat.
Preparing the Fish Sauce:
- First, add warm water, sugar, and lime juice to a bowl (except for the fish sauce, garlic, and chili, which will be added last), stirring until dissolved.
- Then slowly pour in the fish sauce while stirring and tasting until it reaches the desired balance of sour, salty, sweet, and lightly garlicky.
- Finally, add the chopped garlic and chili. The sauce should have a delicate balance of tanginess, saltiness, sweetness, and a hint of garlic aroma.

Instructions:

- Soak the mung bean vermicelli in water and cut into sections.
- Peel the taro, wash thoroughly, and slice thinly.
- Peel and finely chop the shallots.
- Place all these ingredients in a bowl, season with 1 tablespoon of cooking oil, ½ teaspoon of salt, 1 tablespoon of sugar, 1 tablespoon of seasoning powder, 1/2 teaspoon of pepper, mix well.
- Finely chop the garlic. Slice the carrots. Clean the herbs. Wash the lettuce, bean sprouts. Crush the peanuts.
- Soak the rice paper until soft, then add the prepared filling and roll it up.
- Take a bowl and add 2 tablespoons of fish sauce, 1 tablespoon of lime juice, 1 tablespoon of minced garlic, 2 tablespoons of sugar, half a carrot thinly sliced, ½ cup of lukewarm water.
- Heat oil in a pan. Fry the spring rolls until golden and crispy, then remove and drain excess oil.
