iOS 15 does not include the SharePlay mode.

Apple has decided to delay the introduction of the SharePlay feature for iOS 15. The company mentioned that this new feature will be accompanied by a later update of iOS 15 and will not be present in the initial public release of iOS 15, iPadOS15, tvOS 15, and macOS Monterey.

SharePlay is a new feature that allows users to play and share music, movies, and TV shows with friends via FaceTime. Features like video chatting, screen sharing, and even content streaming in groups can all be done through SharePlay.
