
According to the shop owner, an authentic bowl of Singaporean prawn noodles consists of: broth made from fresh shrimp heads and pork bones using a traditional recipe; two-thirds fresh thick yellow noodles, one-third white rice vermicelli; tender simmered pork ribs; and fresh chives and shrimp.
In particular, meticulously selected fresh shrimp are split in half and prepared. The shrimp meat is white, sweet, and firm, infused with the flavorful broth. The split shrimp allows diners to easily peel the shell and enjoy. Each bowl contains about 5 pieces of tender pork ribs, the size of two fingertips, tenderly simmered and rich in flavor.
Although shrimp is the main ingredient, the highlight is the broth that creates the distinctive flavor of the noodles. The broth is a golden brown color, naturally sweet and savory, without any greasiness or heaviness. The taste of Singaporean prawn noodles resembles Chinese cuisine but with less oil. Locals often add a dash of sesame oil and chili sauce to enhance the flavor of the noodles.
