There are various types of fresh squid such as cuttlefish, barrel squid, squid rings, ... However, if you don't know how to carefully choose when shopping, it's easy to end up buying dead, slimy ones.
For cuttlefish: Opt for large, thick-bodied ones with opaque white flesh like thick coconut husk, firm texture, no signs of decay, evenly brownish membrane surrounding the outside, and stiff squid tentacles.
For barrel squid: Choose ones with light pink or red flesh, head still tightly attached to the body, stiff squid tentacles, and intact ink sac.

3. Fresh Shrimp:
Good shrimp should have firm bodies, still hard shells, and bright colors, with the head firmly attached to the body.

+ Prawn: Still lively, bright green eyes, pinkish-white color.

4. Crab:
Select crabs that feel firm when pressed firmly on the abdomen, they should not yield, with large, sturdy abdomens, male crabs are firmer than females. Avoid selecting crabs that are soft and watery because they have less meat and are less flavorful.

Select live ones, with plump bodies and full shells; the fuller the better. Those with retracted shells are thin. If a shellfish sinks in water, it's alive; if it floats, it's dead.
