Many people love eating french fries but struggle to achieve the perfect crispiness. Therefore, PasGo is sharing a recipe for making perfectly crispy french fries.
Who can resist those golden, crispy french fries? Undoubtedly, this is the most beloved and popular snack, but not everyone can successfully make it. The most common problem when frying potatoes is that they turn out soggy and limp. Or worse, if you try to fry them until crispy, they might end up burnt.

Ingredients:
- Potatoes: 5 pieces
- Vinegar
- Cooking oil
- Salt
When choosing potatoes, opt for slightly firm ones with medium size, feeling heavy in hand, slightly smooth skin, and brownish-yellow color.
How to make french fries:
Step 1:
- Peel the potatoes and wash them thoroughly.

- Cut the potatoes into evenly-sized sticks or use a wavy knife for a more attractive appearance. After cutting, soak the potatoes in a basin of cold water mixed with salt and vinegar for about 15-20 minutes, then drain. This soaking process prevents discoloration and removes excess starch from the surface, resulting in crispier fries when fried.
Step 2:
- Prior to frying, blanch the potatoes by boiling them in a pot of water with 1 teaspoon of salt and ½ tablespoon of vinegar for about 3-4 minutes.

- Then, use a slotted spoon to transfer the potatoes to a basin of cold water or ice water for approximately 10 minutes, then drain in a colander or pat dry with a kitchen towel to remove excess moisture from the surface of the potatoes.

Step 3:
- When the potatoes appear slightly dry on the surface, remove them for frying. Heat oil in a pan until hot, then add the potato pieces to fry, frying for about 5 minutes until the edges of the potatoes become slightly wrinkled, then remove with a slotted spoon.
- When frying, ensure the potatoes are fully submerged in oil for even cooking and browning. Occasionally use chopsticks to gently separate the potato pieces to prevent them from sticking together, then remove and drain excess oil.

Pro Tip: For extra crispy fries, fry them twice. The first fry is to partially cook the potatoes, then remove and fry for the second time in hot oil for another 5 minutes or until they turn golden brown and the outer skin becomes slightly crispy. Remove the fries and place them on paper towels to absorb excess oil, resulting in a less greasy texture when eaten.
After frying, you can sprinkle a little sea salt on the potato plate for a rich flavor, enjoy with chili sauce, tomato sauce, or mayonnaise, all are very delicious. Potatoes are a nutritious tuber that many people love. This is a low-calorie vegetable, with no fat or cholesterol, high in vitamins and an excellent source of potassium, vitamin B6, and rough fiber.
These crispy fried potatoes can be used as a snack or a drinking snack with beer, which is also very suitable.
