- Soak the bamboo skewers in cold water, when grilling shrimp by skewers, it will not burn.
Making seasoning mixture:
- Put chopped garlic and chili into a bowl, then add 1 teaspoon of salt, ½ teaspoon of sugar, ½ teaspoon of pepper, and 2 teaspoons of vegetable oil and mix well. Then, add 1 teaspoon of lime juice to the salt mixture, mix well to blend the spices together.
Marinate the shrimp:
- Put the shrimp in a bowl, pour the salt and chili mixture over the shrimp. You can wear plastic gloves and use your hands to rub the salt and chili mixture onto each shrimp to evenly absorb the spices. Marinate the shrimp for about 30 minutes.

Grilling shrimp:
- To grill spicy salt and chili shrimp, you can grill with a stove (electric stove or charcoal stove) or an oven, however, grilling with a stove will give the best flavor
- Grilling shrimp with a stove (electric stove or charcoal stove): After preparing the stove, arrange the skewers of shrimp evenly on the grilling rack. When grilling, you must constantly turn them to make the shrimp cooked evenly without drying out or burning. During grilling, you can spread a layer of butter mixed with cooking oil on the shrimp body to make the shrimp shiny and more delicious. Grill until the shrimp are evenly red and yellow on all sides. Note, do not grill too long because the shrimp will dry out, losing its sweet flavor.
- Grilling shrimp with an oven: If using an oven, you can skip the shrimp skewering step. Arrange the shrimp on a baking sheet lined with parchment paper, place in the oven at 180°C for about 10 - 15 minutes until the shrimp are evenly cooked and red.
Tips for you:
- It is advisable to prepare large sea salt grains for marinating shrimp, if using iodized salt it will dissolve very quickly, when marinating the salt will dissolve completely into water.
- When eating, if using soft shell shrimp and want to eat the shell, before grilling you should wipe off the salt on the shrimp so that the shrimp shell is not too salty, if using hard shell shrimp, only want to eat the meat then leave the salt on the shell and grill normally.
