Instructions:
Prepare Ingredients:
- Firstly, prepare the broth by simmering winter melon, carrot, xa bau tuber, yam, and dried shiitake mushroom stems in 1.5 liters of water for 5-8 minutes. Turn off the heat, remove mushrooms and tubers from the broth.
- Soak snow fungus mushrooms in warm water for 1-2 minutes until they expand and turn white. Drain and cut them into small pieces, discarding the tough parts.
- Thinly slice the straw mushrooms and shred the vegan abalone mushrooms.
- If using corn, separate the kernels or finely grate.
- Cut boa ro root into small pieces.
Cook the Soup:
- Mix 50g tapioca starch with 50ml cold water. Then, over low heat, gradually pour the starch mixture into the broth while stirring until the broth thickens.
- Once the broth boils again, add the vegan abalone mushrooms, straw mushrooms, and prepared snow fungus mushrooms. Stir the soup mixture evenly.
- When the soup boils again, add the corn and stir well. Adjust the seasoning to taste.
- Finally, wait for the soup to boil again, sprinkle boa ro root on top, and serve hot.
