1. Braised Carp with Pickled Mustard Greens

Ingredients:
- 1 whole carp
- 200g pickled mustard greens
- 300g pork belly
- 2 hot peppers
- 2 shallots
- 3 tbsp sugar
- 3 tsp pepper
- 4 tbsp cooking oil
- 3 garlic cloves
- 3 tbsp fish sauce
- 3 tbsp seasoning powder
Instructions:
- Clean and drain the carp, cut into pieces, and soak in diluted saltwater for 2 minutes to reduce fishy odor.
- Cut the pork belly into large pieces, set aside the hot peppers, and cut the pickled mustard greens into bite-sized pieces.
- Crush the garlic and shallots.
- Heat oil in a pan, add a small amount of sugar to caramelize, when smoke appears, turn off the heat, add the pork belly and pickled mustard greens, and stir-fry briefly.
- Layer the carp on top, add garlic, shallots, and crushed hot peppers.
- Add 1 tbsp fish sauce and cook the fish for 5 minutes.
- Add enough hot water to cover the fish, season with salt and seasoning powder to taste.
- Cover and continue cooking for another 5 minutes until you have a delicious dish to enjoy with hot rice.
