Ingredients:
- 500g chicken (thighs or drumsticks)
- 1 onion
- 1 lime
- A handful of coriander
- 50g roasted peanuts
- 1 piece of ginger
- 5 cloves of garlic
- Seasonings: pepper, salt, sugar
Method:
Step 1: Prepare the chicken and ingredients:
- Rub salt all over the chicken pieces, then rinse them thoroughly.
- Boil a pot of water on the stove, then gently poach the chicken over medium heat. Add a few slices of ginger to the pot to reduce any unwanted odor.
- Poach the chicken until cooked through, then remove from the pot and let it cool. Tear the chicken into bite-sized pieces.
- Peel and slice the onion into thin rounds. Soak them in a mixture of cold water and vinegar for 30 minutes, then drain.
- Wash the coriander leaves thoroughly and drain.
- Peel and crush the garlic cloves, then finely chop them.
Step 2: Make the salad dressing:
- To prepare the flavorful dressing, combine 2 tablespoons of lime juice, 1 tablespoon of sugar, 2 fresh chili peppers, 3 tablespoons of fish sauce, 3 tablespoons of hot water, and minced garlic. Stir until the sugar dissolves completely, then adjust the taste as needed.
Step 3: Mix the chicken and onion salad:
- After completing the preparation steps, combine all the ingredients in a large bowl and toss well.
- Add the shredded chicken to a large bowl, then add 2 tablespoons of the prepared dressing and marinate for 5 minutes. Next, add the onion, coriander, and 2 tablespoons of fish sauce, then mix.
- After about 15 minutes, transfer the salad to a serving plate, sprinkle with crushed roasted peanuts and a dash of pepper, and serve immediately.

This is a delectable recipe for Beef and Onion Salad.
Ingredients: Beef 500g, White onions 1, Purple onions 1, Red onions 4, Limes 2, Lettuce 100g, Coriander 100g, Peanuts 50g, Chillies 2, Garlic 6 cloves, Sugar 2 tbsp, Seasoning powder 1 tbsp.


Ingredients: Pork tongue 400g, Onions 1, Dried onions 5, Seasonings: Sugar, apple vinegar, fish sauce, white sesame seeds, Fresh ginger, Vietnamese balm, Mint, Coriander, Chillies, Lime juice, Minced garlic.
Instructions: Prepare the ingredients by soaking the onions in a mixture of 1 tbsp of sugar and 1 tbsp of apple vinegar for 15 minutes. Drain the onions. Clean and chop the Vietnamese balm, mint, and coriander. Peel and slice the ginger thinly. Crush the chillies. Roast the white sesame seeds until golden brown. Wash the pork tongue and blanch it in boiling water for 3-5 minutes until the outer layer firms up. Remove and rinse under cold water, then peel off the outer white layer. Boil the pork tongue in water seasoned with 2 tbsp of vinegar, 2 tsp of seasoning powder, and 2 crushed dried onions for about 20 minutes until cooked. Remove and soak in cold water until firm. Slice thinly. Prepare the dressing by mixing 60ml fish sauce, 60g sugar, and 60ml lime juice until the sugar dissolves. Add minced garlic and chillies, mix well. Mix the sliced pork tongue, onions, soaked onions, aromatic herbs, and sliced ginger in a bowl. Pour the dressing over and gently toss to coat. Serve on a plate and sprinkle with roasted sesame seeds. Enjoy the tangy and flavorful salad, perfect with prawn crackers or grilled rice paper.
