8. Tomato Beef Congee
Ingredients:
- Sticky rice and regular rice: 300gr
- Beef: 200gr
- Tomatoes: 2 pieces
- Bone broth (if available)
- Necessary seasoning: fish sauce
How to prepare:
Preparation of ingredients:
- Mix sticky rice and regular rice, rinse well, then soak in water for a few hours to allow the rice to swell. This will make cooking congee easier and faster.
- If bone broth is not available, you can buy large marrow bones or beef bones, rinse them well, and break them open. Blanch them once in boiling water to remove any odor. Finally, put the bones in a pot of water and simmer for a few hours to extract the bone broth.
- Beef (choose tender and soft cuts, without tendons) rinse well and cut into small pieces or grind. Because the baby's digestive system is still very delicate, there's no need to marinate the beef.
Cooking minced beef congee:
- After the bone broth is done simmering, remove the bones and keep the broth (it's recommended to strain it to avoid any bone fragments remaining in the broth). Drain the soaked rice, rinse well, and add to the pot of bone broth to simmer. Initially, cook over high heat, and when it boils, stir the rice evenly to prevent sticking to the bottom of the pot, then reduce the heat and continue simmering the congee until the rice grains are soft.
- When the congee is almost done, add the prepared beef to the pot and stir evenly. Once the beef is cooked, add the finely ground tomatoes and simmer for a while longer. Season with a little seasoning to make the dish more appealing, then turn off the heat.

- Beef: 500g
- Lotus seeds: 100g
- Sticky rice: 100g
- Herbs, coriander…
- Salt, fish sauce…
How to prepare:
Preparation of ingredients:
- Rinse the beef and refrigerate for about 30 minutes to slightly chill, then slice or mince the beef. Season with some spices and simmer until tender.
- Rinse the lotus seeds and drain (if using dried lotus seeds). If using fresh lotus seeds, remove the centers. Boil the lotus seeds in boiling water for about 20 minutes until soft, then drain.
- Rinse the sticky rice and drain. Soak the rice for about 1 – 2 hours to reduce cooking time for the congee.
Cooking the congee:
- Put the rice in a pot with water at a ratio of 1 part rice to 3 parts water. Boil the pot of congee over high heat until boiling, then reduce the heat and simmer for about 2 hours.
