Instructions:
- Prepare the meat: For pork, clean it thoroughly from dirt and odor by rubbing with salt. Then, wash with cold water and drain. Cut the meat into thin, bite-sized pieces.
- Marinate the meat: Marinate the meat with 1 tablespoon of minced garlic, 1 tablespoon of minced purple onion, 2.5 tablespoons of fish sauce, 2 tablespoons of food coloring, 5 tablespoons of condensed milk, and 100ml of coconut milk. Mix well and let the meat absorb the flavors for at least 4 hours or overnight if you have time.
- Soak rice and cook sticky rice: Soak the sticky rice in water. Next, add about 300ml of filtered water and soak the rice for at least 4 hours or overnight if you have time. - 1/2 teaspoon pepper
- 1 tablespoon sugar
- 1/2 teaspoon minced garlic
- 1 tablespoon fish sauce
- 200ml cooked water or fresh coconut water
- 2 tablespoons char siu seasoning powder (available at grocery stores)
- 1 garlic clove, 1 onion, 1 bunch of cilantro, 2 parts of chopped green onions
- For sticky rice: 300g glutinous rice, 270ml scallion-infused water, scallion oil, pickled vegetables for serving.
Instructions:
- Step 1: Prepare pork: Wash the pork thoroughly, cut it into thin, bite-sized pieces. Marinate the pork with spices and minced garlic, chopped cilantro. Marinate overnight for the flavors to absorb.
- Step 2: Char siu the pork: Heat a pan, add 1 tablespoon of cooking oil and heat. Once the oil is hot, fry the pork pieces evenly on both sides (about 3-4 minutes). Then, pour the seasoned water and 200ml of cooked water (or fresh coconut water if available) into the pan, cover, and simmer over medium heat. While simmering, occasionally turn the meat to let the spices penetrate and the meat cook evenly. When the pork pieces are cooked evenly, reddish and slightly charred, you can turn off the heat. Pour the char siu sauce into a bowl, which can be enjoyed with bread like char siu bread. The meat can be sliced for immediate consumption while still hot.
- Step 3: Cook sticky rice: Rinse the glutinous rice thoroughly, soak it overnight for the rice to soften. After about 8 hours, rinse the rice again with water for it to be clean, then put it in an electric rice cooker with water and a little salt. Turn on the cooker to cook normally like cooking rice.
- Secret to delicious sticky rice: when cooking sticky rice with an electric rice cooker, do not open the lid too much. When the rice cooker switch turns green, you should leave it for about 7-8 minutes before opening. This way, the sticky rice will be delicious without being mushy.
