6. Xôi Ông Hòa
The prices at Xôi Ông Hòa range from 25,000 VND to 50,000 VND per portion. Aside from the má đào pork, the stall offers other tasty sides like soft-boiled eggs, braised eggs, pate, sausages, and meatloaf. Mr. Hòa used to sell pho but stopped in 2002 due to health issues. After nearly two decades, he returned to selling food, and now his stall is more popular than ever. While he used to stay open until 10 PM, the stall now runs out of food by around 2 PM. Customers wishing to try the má đào pork often have to text in advance to reserve their portion. Initially, the stall was run by his wife, but Mr. Hòa now personally prepares the rice and sides, except for the pate and sausages. When they first started, they only sold 1-2 kg of rice a day, but now they go through 22-24 kg daily. Mr. Hòa wakes up at 3 AM every day to prepare ingredients and cook the rice. A full meal at his stall costs 50,000 VND, while a dish with only the má đào pork costs 35,000 VND. Despite requests to increase the amount of pork and extend the opening hours, he has refused due to the physical strain it would cause.
The star of the dish is undoubtedly the má đào pork. Its tender texture and low fat content make it incredibly satisfying, and it can be easily separated with a spoon. The seasoning is perfectly balanced, with a delicate sweetness that complements the savory flavor, unlike the overly salty taste of traditional braised pork. Many customers savor the pork slowly, saving it for the end of the meal. Mr. Hòa uses no less than 17 ingredients to prepare the special má đào, with distinct aromas from star anise, honey, tomato, and five-spice powder. He avoids using fish sauce in the marinade to preserve the delicate sweetness of the other ingredients.

The rice here is plump and round, and when it’s running low, more is added directly from the steamer to keep it steaming hot. While the rice might seem a bit drier at first glance, it pairs perfectly with the savory braised pork sauce poured over it.
Ms. Thảo ensures all the sides are kept warm by using an induction stove on the table to gently heat the meats and sausages. While she calls it “heating,” the meats have already been braised earlier in the day, and the stove only helps maintain the temperature. The sausage is braised in a flavorful broth with just the right amount of liquid, and slow cooking ensures that the outer skin remains intact while the flavors are absorbed. Ms. Thảo takes pride in the secret broth recipe she uses, which many customers have come to love. She says some have even told her that when they’ve tried buying from other stalls, their children rejected it, saying the taste was wrong—'the broth isn’t the same.' Ms. Thảo, however, keeps her recipe a closely guarded secret. She doesn’t even sell it to others, only revealing that she uses all-natural seasonings like fish sauce and salt, avoiding MSG and seasoning powders.
