10. Image of Pounding Banh Day
Banh Day is a traditional Vietnamese dish made with great care. The key ingredient is glutinous rice, which is fragrant and sticky. Once the rice is selected, it is washed clean, soaked in warm water for about 12 hours, then drained before being steamed in a wooden basket. The wooden basket is used to preserve the fragrant aroma of the glutinous rice and prevent it from becoming mushy.
After steaming, the rice is placed in a mortar and pounded finely. The mortar for pounding Banh Day is made from durable wood, with smooth, fragrant grain and a hollow interior; the pestle is also made from heavy, hard wood. During the pounding process, the pestle is dipped in water to prevent sticking. This task is physically demanding and requires strength and technique, so it's usually performed by strong, young men. The pounding process often involves pairs of people, and when they become tired, they switch with others. The more thoroughly the rice is pounded, the stickier and tastier the Banh Day will be, and it will last longer. The rice is pounded until it becomes smooth and sticky, which signals that the Banh Day is ready.
