- cooking oil
Instructions:
- Rinse mushrooms thoroughly, soak in diluted saltwater, then pat dry with paper towels.
- Mix flour, cornstarch, salt, and water to make a batter. Place bread crumbs on a plate.
- Heat oil in a pan over medium heat. Dip mushrooms in the batter, coat with bread crumbs, then fry evenly on both sides.
Remove cooked mushrooms, drain excess oil, and enjoy!

- 3 teaspoons cornstarch
- Fresh cilantro/basil leaves
- Vegan broth powder, pepper
- Rice paper wrappers
Instructions:
- Cut tofu into thin slices, lightly fry. Be careful not to fry too much, tofu will become dry and unappetizing. Use scissors to cut tofu into small pieces.
- Soak glass noodles until soft, cut into short pieces about 3-4cm. Soak wood ear mushrooms, shiitake mushrooms until rehydrated, then slice thinly. Julienne carrots. Chop cilantro. Add pepper, vegan broth powder, cornstarch. Mix all ingredients evenly.
- Wrap the spring rolls and fry them in a pan over medium-high heat with plenty of oil, then remove. The best way to fry spring rolls is on two heats. The second time, use less oil. Spring rolls will turn golden and crispy, lasting longer.

It's a familiar type of soup, most commonly cooked among savory soups and vegetarian soups. Making Vegetarian Chicken Mushroom Soup is not complex at all, and those who enjoy vegetarian soups can experiment with various other ingredients to create different nutritious and delicious vegetarian soups!
Ingredients: (serves about 2 - 3)
- 100g fresh tofu
- 100g shiitake mushrooms
- 100g jicama
- 100g carrots
- 50g cilantro
- 100g sweet corn
- 10g cornstarch
- Scallions, vegetarian broth powder, ground pepper
Instructions:
- Clean shiitake mushrooms with vinegar and salt water, if the mushrooms are large, slice them thinly to make them resemble chicken meat more. Rinse tofu thoroughly with water to remove all dirt.
- Peel and julienne jicama, carrots, then rinse them clean. Cut sweet corn into kernels. Dissolve cornstarch in a small bowl with 10ml of water, mix well and add to the soup.
- Bring a pot of water to boil, add jicama, sweet corn, and carrots, cook until tender. After about 15 minutes of cooking, add shiitake mushrooms and tofu. When the soup boils after 5 minutes of cooking, season with 1 teaspoon of sugar, 2 teaspoons of vegetarian broth powder, half a teaspoon of ground pepper, and 1 tablespoon of soy sauce.
- Finally, add the cornstarch mixture. While pouring in the starch, use the other hand to stir the soup to prevent lumps, my friend! Let the soup cook for another 5 minutes for the starch to dissolve completely, then turn off the heat.
- Serve the hot and steaming vegetarian chicken mushroom soup in a bowl, add some finely chopped scallions, fresh cilantro, and ground pepper on top. The rich flavor of the soup, tender tofu and mushrooms, along with the sweet vegetables will make your meal enjoyable and aid digestion.
Remember, the best soup is enjoyed hot, neither too thin nor too thick! If you don't have shiitake mushrooms, you can use other types of mushrooms. Additionally, you can add any vegetables you like into the soup, as there's plenty of room for you to experiment and be creative with various soup recipes!
