Traditional Assorted Hot Pot Broth
Ingredients:
Chicken, seafood (shrimp, clams, squid), beef (beef tendon, beef brisket), tofu, assorted mushrooms (oyster mushrooms, shiitake mushrooms, wood ear mushrooms), hot pot vegetables (tomatoes, celery, carrots, water spinach, banana blossoms), fresh noodles or instant noodles.
Preparation:
Clean the chicken thoroughly and rub with salt. Cut it into bite-sized pieces. Use the chicken bones to make the broth. Marinate the beef slices. Clean and arrange seafood and mushrooms on separate plates. Soak vegetables and mushrooms in diluted saltwater.
Hot Pot Broth:
Sauté purple onions, then add tomatoes and simmer. Pour in the prepared chicken bone broth, season with chili sauce, sugar, and various spices. Once the pot is boiling, add chicken, seafood, and beef sequentially.
