Traditional 80-year-old Pho restaurant in the heart of Hanoi
Pho Tư Lùn is located on Hai Ba Trung street, near the intersection with Hang Bai, Hanoi. Despite the emergence of modern stores nearby, the small, simple pho shop of Mrs. Hang has been here for 8 decades. 'The name Tư Lùn originated from my grandfather's time. I'm 62 years old now, the third generation selling family pho here,' the owner said.
After inheriting the shop from their parents, Mrs. Hang's sisters opened pho shops at various locations. In addition to the original location on Hai Ba Trung street, their family also has shops on Au Trieu and Hang Ma streets, Hanoi.
Not only long-standing, but Pho Tư Lùn also impresses diners with its distinctive delicious flavor. Walking from afar on the sidewalk, the fragrant smell of simmering bone broth permeates the air. Unlike some pho shops in Hanoi, the broth here is cloudy and has a sweet aroma from the bone marrow.
Preserving the recipes from grandparents and parents, Mrs. Hang focuses on selecting the meat. The cooked meat is made from the loin and rump, sliced and tenderized to maintain its sweetness. The well-done meat is boiled and sliced into thin, finger-length pieces. The beef is tender yet retains its chewiness, with evenly sliced pieces without being crumbly or tough.
Having been in business for many years, the restaurant is a familiar spot for many customers. Mrs. Nguyen Thi Bong, 73 years old, mentioned she has been dining here since childhood, even before she was born. 'Today, I brought my two grandchildren to visit the old quarter and come back here to enjoy Pho Tư Lùn. The flavor of the pho remains the same as before and even more delicious,' she added.
The process of making pho, adding meat, and pouring broth is carried out in a systematic manner.
The pho restaurant opens from morning until 11 p.m. The busiest times are early mornings and late afternoons. They offer three main types of pho: well-done, rare, and a combination of both, priced from 50,000 to 60,000 dong, depending on the customer's preference. Crispy fried dough sticks are served alongside the pho, making the dish more enticing.
