Note on selecting quality pork belly:
For crispy fish sauce pork belly, choose the lower part of the pork belly, the section lying under the ribs. This part has thin layers of fat and meat, stacked alternately in 3 to 5 layers, very appealing for frying or roasting dishes, it will be much more fragrant. When selecting pork belly, also choose those with good aroma and elasticity. The meat should have a light pink color without blood clots or spots like rice grains.

2. How to make Crispy Fish Sauce Pork Belly
Step 1: Prepare the meat
Rub the meat with 1 tablespoon of salt for about 5 minutes. Then rinse it with clean water and drain.
Step 2: Prepare other ingredients
Peel and wash the ginger, then slice it.
Peel, wash, and slice 2 bulbs of shallots, finely chop the remaining part.
Peel, wash, and finely chop the garlic.
Wash and finely chop the chili peppers.
Step 3: Boil the meat
Bring a pot of water to a boil, add 5 grams of sliced ginger, 2 bulbs of sliced shallots, 1 teaspoon of salt, then boil the meat for 5 minutes.
Remove the meat, use a knife to score the skin with multiple cuts, then drain the water. This method helps the skin to become crispy and puffy when frying.

Step 4: Marinate the meat
The meat marinade consists of: 1/2 tablespoon of seasoning powder, 1/2 teaspoon of sugar, 1 teaspoon of fish sauce, 1 teaspoon of mixed shallots, garlic, and chili, finely chopped and mixed evenly. Then, marinate the meat with this mixture for 20 minutes.

Step 5: Coat the meat with flour
Mix 3 tablespoons of crispy frying flour and 3 tablespoons of rice flour in a large plate, then evenly coat each piece of meat with the mixture.
Remember to remove the garlic, chili, and shallots sticking to the meat before coating with flour, as they tend to burn easily during frying.

Step 6: Fry the meat
Heat the pan on the stove, add cooking oil and wait for it to heat up.
Carefully place the flour-coated meat pieces into the pan and fry until both sides are golden brown and cooked through.
To prevent oil splatter while frying, when the oil is hot, sprinkle a little salt into the pan before frying the meat. This method not only reduces oil splatter but also helps the pork skin become crispier and more delicious.

Step 7: Prepare the fish sauce dipping sauce
Heat up a new pan with a drizzle of oil, add the garlic, chili, and remaining purple onions, then sauté until fragrant.
Next, add 1.5 tablespoons of sugar and 1.5 tablespoons of fish sauce to the pan, then stir well. After that, add the fried meat and stir-fry evenly over medium heat for 5 minutes to coat the meat evenly with the sauce.

Step 8: Completion
The marinated pork, with its golden crispy crust, is deeply infused with a savory-sweet sauce and a rich, fatty taste from the meat. It's best enjoyed with hot rice.
