Step 1:
Prepare mung beans: Use a rice cooker to cook the beans like cooking rice. Once cooked, let them cool and mash them finely, or you can use a blender.
Pandan leaves: Wash thoroughly, chop finely, then crush into a paste.
Grated coconut: Add 0.5 liters of warm water to the coconut, squeeze to extract coconut milk, set aside. Repeat this process once more with another 0.5 liters of water, squeeze again, and set aside.
Step 2: Divide the rice flour, tapioca starch, and sugar into 2 portions. Mix one portion thoroughly with coconut milk, stirring until smooth. Strain the remaining portion, then mix with mung beans (mixture 1).
Step 3: Add crushed pandan leaves to the coconut milk mixture, strain to remove leaf residue. Combine the remaining flour mixture with the coconut milk mixture, stirring until smooth. Strain once more, optionally adding a few drops of food coloring for aesthetics (mixture 2).
Step 4: Prepare the steamer, line the mold with cooking oil, place the mold in the steamer. Pour a layer of mixture 2, about 5 cm thick, into the mold, steam until cooked. Then, pour another layer of mixture 1, about 5 cm thick, into the steamer, steam until cooked. Repeat with mixture 2 until all the batter is used or the mold is full. Allow the final layer to cool before removing the mold from the steamer. Gently invert the mold onto a plate and remove the cake.
