Ingredients:
– 600g small squid
– Lemongrass: 50g
– Chili peppers: 5 fruits
– Ginger: 1 small branch
– Cilantro: 50g
– Garlic: 1 bulb
– Seasonings: Bouillon powder, salt, MSG, fish sauce, pepper, sugar, cooking oil
Instructions:
Step 1: Prepare the Ingredients
– Rinse chili peppers, lemongrass, and garlic, remove seeds, finely chop.
– Wash and chop spring onions and cilantro into small pieces.
– Clean squid with white wine, remove ink sac and white backbone, cut squid head, rinse with water, drain.

– Boil water with a pinch of salt and ginger, blanch squid for about 30 seconds, drain. Cut squid into bite-sized pieces, marinate with finely chopped lemongrass, ½ teaspoon of bouillon powder, 1 teaspoon of MSG, ½ teaspoon of pepper, ½ teaspoon of fish sauce, 1/3 teaspoon of sugar for 15 minutes.

Step 2: Cook Lemongrass Chili Squid
– Heat a pan, add cooking oil, sauté garlic until fragrant, then add lemongrass, chili peppers, 1 teaspoon of turmeric powder, 1 teaspoon of bouillon powder, then transfer to a plate.

– Heat oil in the pan again, add squid, stir-fry over high heat for 3 – 5 minutes. Add lemongrass, 1 tablespoon of chili paste, season to taste. Stir-fry until squid is firm, cooked through, then add chopped spring onions, stir quickly, turn off the heat and transfer to a plate.
