Gourmet Porridge is crafted from the main ingredients of rice and fresh crucian carp. Under the skillful hands of artisans, the porridge is cooked in a rustic yet refined manner. To prepare the gourmet porridge, the chef must use evenly soaked rice, immersed in water for about 30 minutes to make each grain plump and glossy.

To make the gourmet porridge delicious, the fresh crucian carp is cleaned and added to a pot of boiling water with a few slices of ginger to enhance the fish flavor. Once the fish is cooked, the chef cleans it, removes the fish meat, grinds the fish bones, and strains it through water. The pot of crucian carp water with its shiny golden fish oil is brought to a boil. The soaked rice is drained and slowly added to the boiling crucian carp water on the stove. The chef simultaneously manages the heat and skillfully ladles the small wooden pestle through a woven sieve. Each grain of porridge harmonizes with crucian carp water, undergoing the pounding process in the pot to create a soft, smooth texture. Bánh khúc is cut into bite-sized pieces, placed on top of the porridge, creating an enticing presentation.
