Instead of selling pho in spacious kitchens or restaurants, Ms. Hien bought an old 24-seat bus and transformed it into a special chicken pho establishment in Hanoi.
Unique Chicken Pho Food Truck in Hanoi
The chicken pho restaurant is located on Vo Chi Cong street (Tay Ho, Hanoi) and utilizes an old 24-seat car as a kitchen to serve breakfast guests. Thanks to the idea of using an old bus, renovated into a pho selling place, Ms. Thu Hien's restaurant attracts many customers.

Ms. Hien used to run restaurants and eateries, but after a difficult period during the Covid-19 pandemic, she and her husband came up with the idea of buying a bus to sell chicken pho. The entire kitchen space of the chicken pho restaurant is neatly arranged inside the compartment of the 24-seat bus, leaving a strong impression on many diners.

To prepare delicious pho, Ms. Hien must carefully prepare and process the ingredients in each step. She only selects Dong Tao chickens that are about 3.3-3.5 kg in weight for their sweet taste, crispy skin, low fat, and non-greasy texture. The broth is made without any additives, entirely from bones. With this model, customers usually come to the counter or sit at a table and order from the staff outside. After making the pho, Ms. Hien and another staff member inside the bus serve the bowls of pho. Despite the limited space inside the bus, it can still move flexibly and accommodate all the necessary pho-making utensils.

The restaurant opens from 6 AM until around 10 AM. It's renowned for its special chicken pho that comes with all the ingredients priced at 100,000 VND per bowl. Depending on customers' requests, prices may go higher, and occasionally, some customers even request bowls priced at 200,000 VND.

The uniqueness in its design has partly contributed to the brand of the 'food truck' pho restaurant on Vo Chi Cong street for many years. The chicken pho on the food truck has been associated with Ms. Hien for a long time and is gradually becoming its own brand.
