The 'Midnight' baguette features a black outer crust. Despite its unconventional appearance, the filling remains traditional with ingredients such as vegetables, sausage, cold cuts, shredded pork, and sauce... Due to its unique appearance, the Can Tho community has taken notice, eagerly purchasing it.

According to some customers, the bread's black color may resemble burnt, yet upon tasting, it exudes a pleasant aroma without any bitterness. To achieve the distinctive dark hue for this bread, besides the main ingredients like flour, yeast, salt, and sugar, it also includes bamboo charcoal powder and squid ink. Kneading the dough requires multiple and longer sessions compared to regular bread. It's crucial to balance the proportions to ensure optimal elasticity, crispiness, and rising during baking. Without precise mixing, the bread will become tough and fail to rise properly.

When baked, the bread acquires an eye-catching deep black color. Similar to conventional baguettes, it's complemented with meat, pate, sausage, pickled vegetables, and a unique house sauce.


To craft these impressive loaves of bread that attract customers, both Trung and Nhật dedicated a considerable amount of time to research. There were days when they skipped meals just to perfect the recipe for this bread. Currently, the shop sells an average of 750 – 800 loaves per day, from 7 am to 4 pm or until sold out. Many patrons come not only out of curiosity but because the bread is made from bamboo charcoal, which is not only good for health but also ensures nutritional value, making it a favorite among the people of Can Tho.
