2. Detailed guide on how to make salt and pepper chicken
Step 1. Prepare the chicken
- Apply vinegar and salt on the chicken surface, rub evenly, and let it sit for about 5 minutes. Then, use water to rinse the chicken thoroughly several times.
- In case you don't have vinegar, you can also use diluted lime juice with salt to prevent any gamey smell on the chicken meat.
Step 2. Prepare chicken marination ingredients

Seeds such as pepper, star anise,... are roasted until fragrant, then crushed and mixed thoroughly with the previously prepared spices. Remember, turmeric powder is essential to give the salted chicken skin a beautiful golden color.

- Peel and clean the onions, then cut into thick slices about 1.5-2cm thick
- Remove the old parts of the lemongrass, wash them thoroughly, and cut them in half or into 7-10cm pieces

Step 3. Marinate the chicken
- Evenly rub the previously prepared spice mixture on the surface and inside of the chicken.
- You can add a few lime leaves and some lemongrass inside the chicken cavity.
- Wrap the chicken in aluminum foil, then marinate it in the refrigerator for 1 hour.
Step 4. Proceed to salt curing the chicken
Select a large pot that can fit the whole chicken, then add about 400 grams of salt into the pot.
Apply the prepared lemongrass and onions evenly on the salt surface. Finally, place the marinated chicken and the pot (remember to include the aluminum foil part).
Cover the pot, reduce the heat to medium-low, and cook the chicken on the stove for about 1 and a half hours.
Check the doneness by using a sharp knife to pierce the thigh. If the juice is still pink, reapply salt and continue cooking for an additional 15 to 30 minutes.

Push the salt aside and carefully remove the chicken, keeping it level, trying not to tilt or spill any water. Place the chicken on a large plate and remove the aluminum foil
