Cooking Tools:
- Spoon
- Rice Cooker
Preparation Time: 8 hours
How to Make Yogurt Using a Rice Cooker:
Step 1: Pour Milk, Hot Water, Condensed Milk into the Pot
- First, pour hot water and pasteurized milk into the rice cooker pot, then place the pot inside the rice cooker. Add condensed milk to the pot according to your family's taste, you can add from 3 to 5 spoons.
- Select the 'Cook' mode to heat the milk but only heat it to a temperature of 80 – 90 degrees Celsius, do not boil. Stir the milk while heating to prevent it from scorching.
Step 2: Add Starter Culture to the Milk Pot
- The yogurt used as a starter culture needs to be runny, flowing smoothly, not frozen solid because cold yogurt when added to hot milk pot can experience thermal shock, not easily dissolving in the hot milk.
- Before adding yogurt to the pot, you need to remove the pot from the cooker and let it cool to a temperature of 50 degrees Celsius after heating it to a temperature of 80 – 90 degrees Celsius. Slowly pour the starter culture into the pot, gently stirring by hand to blend the mixture together.
Step 3: Incubate the Yogurt
- Place the inner pot into the rice cooker and let it ferment naturally for 6 – 12 hours, no need to plug in the cooker.
- After 5 hours, check if the poured milk has a tangy taste, smooth consistency, then you can either take out the yogurt to use immediately or leave it for a few more hours to achieve the desired tanginess and texture.
Finished Product:
Add some strawberries or your favorite fruits to the yogurt to enhance the flavor.
To check the temperature of drinking yogurt, please note:
- Milk with a temperature between 80 and 90 degrees Celsius is hot milk with steam rising, when you dip a little milk on your hand, it feels hot but still bearable, then the milk is ready.
- After boiling, let the milk cool at room temperature for about 20 minutes, then if it feels hotter than baby bath water temperature, the milk has reached 50 – 60 degrees Celsius.
- For incubating the yogurt, the ambient temperature should not exceed 55 degrees Celsius, do not incubate at 30 degrees Celsius or lower, the yogurt will ferment slowly, requiring a longer incubation time. If incubated at 45 degrees Celsius, the yogurt will be ready in 7 hours.
