To ensure that the crispy pork skin dish is packed with flavors and determines its deliciousness, this crucial step is decisive. Hurry to the market and grab the following ingredients:
- Pork Skin (400 grams): Choose thick and flat pork skin pieces, as frying them will make the skin crispy and puffy. Avoid the belly part of the pig as the skin here is thin and won't taste as good when fried. Select pinkish, not too white, and without bruising pork skin pieces.

3. How to make crispy pork skin with fish sauce, garlic, and chili
Prepare the ingredients
Step 1: Removing excess pig hair and fat
- To clean the pig skin, immerse it in boiling water for about 3-5 minutes to open up the pores and easily remove the hair. Use a razor or specialized hair removal knife to shave off the hair on the pig skin. Alternatively, use tweezers to grab the tough, hard-to-shave hairs.
- Rub a generous amount of lemon and salt all over the pig skin, then rinse under water.
- Use a thin knife to filter out the pig fat, ensuring a thorough filtration, leaving only the skin/fat.
Step 2: Prepare the spices
- Crush lemongrass
- Chop chili finely, removing seeds
- Mince garlic finely
Steps to Follow
- Step 1: Boil the pig skin correctly
Add crushed lemongrass, a pinch of salt, seasoning (if available), a slice of ginger or shallots (if available) into a pot of boiling water.
After thoroughly washing and draining the pig skin, put it into the boiling pot until it is cooked, then remove. The boiling time depends on the quantity of the ingredients, adjusting the boiling time for the pig skin. Overcooking will result in a soft and mushy pig skin.
Place the freshly boiled pig skin in a bowl of cold water for about 20-30 minutes.
- Step 2: Air-dry or sun-dry the pig skin
Rub a bit more salt on the upper surface of the pig skin and let it sit for about 5 minutes for the salt to permeate.
Use a knife to cut it into bite-sized pieces.
If you have time, you can sun-dry the pig skin for about 1-2 hours outdoors. If you're not willing to wait patiently, then place them in the oven or air fryer for approximately 30 minutes at a temperature of 150 – 170 degrees. To make crispy pork skin with fish sauce, we need to sun-dry and air-dry at a moderate level. Avoid excessive dryness, which may cause shrinkage.

- Step 3: Frying the pig skin
For the pig skin to be crispy, a considerable amount of cooking oil is needed, so to save on oil, use a pot with a small base.
Putting pig skin into the pot is prone to burning and splattering, so don't cover it and walk away. The finished pig skin after frying will be golden, puffy, and evenly expanded.
Tip: How to fry pig skin without splattering. When frying pig skin, try to flip it continuously because if you stop, it will splatter a lot.
- Step 4: Stir-fry pig skin with spices to complete the dish
Heat a bit of cooking oil in the pan, then sauté chili and garlic until fragrant. When the garlic turns golden, add 2 tablespoons of fish sauce and 4 tablespoons of sugar, stir until the sugar dissolves.
When the sugar dissolves, it's time to pour the freshly fried pig skin in, allowing the sauce to blend into each piece. Stir for about 5 minutes until the sauce is absorbed into the pig skin, then turn off the heat and savor the crispy pork skin with fish sauce.

4. Finished product after completion
The finished product, once completed, will harmonize with a full range of flavors and aromas. Overall, the pig skin will have a rich golden color, complemented by a hint of red and yellow from the garlic and chili. Upon tasting, it offers a delightful mix of salty and sweet notes from the sugar. Particularly irresistible is the crispiness, a joy to the palate. You can even sandwich the crispy pork skin with bread; it's a unique dish worth trying!
