1. Ingredients for Hanoi-style chicken pho (serving 4)
- Local chicken: 1 (choose a hen weighing around 1.2kg-1.5kg or substitute with chicken thighs, chicken breasts are also suitable)
- Ginger: 1 bulb
- Dried shallots: 4-5 bulbs
- Onion: 1 bulb
- Coriander seeds: 2-3 teaspoons (or you can use coriander root)
- Fish sauce, soup powder, sugar, MSG
- Pho noodles
- Scallions, cilantro, lime leaves
- Lime, chili, ground pepper (or chili sauce)
Pro tip: For a sweeter broth, you can also add chicken or pork bones.
2. Chicken Pho Recipe
Step 1: Preparation
- Clean the chicken thoroughly (or you can ask the seller to do it for you).
- Slice the white part of the scallions finely, and chop the green part.
- Cilantro: finely chopped one part, leave one part whole.
- Thinly slice lime leaves (optional, use according to preference)
Step 2: Execution
- Clean the prepared chicken thoroughly, place it in a pot of cold water to cook thoroughly. Add a bit of soup powder to make the chicken meat richer in flavor. When the chicken is cooked, remove it and let it cool.
Note: To keep the broth clear, simmer the water over low heat, partially cover the pot, avoid stirring and skimming.
- Clean and roast dried shallots and ginger until fragrant, quarter the onion, roast coriander seeds (or cut coriander root into 5cm pieces from the base, wash thoroughly for a more gentle aroma). Wrap all these aromatic spices in a clean cloth and add to the pot of broth. Continue to boil the broth over the fire, when boiling, reduce the heat to simmer gently.
- Separate the chicken meat and shred it finely, set aside on a plate. As for the bones + head, neck, and feet of the chicken, put them in the broth to simmer thoroughly.

Pro Tip: For a broth serving 4-5 people, you only need the boiled chicken bones + head, neck, and feet of the chicken, which will yield a sweet broth. For a higher quality broth, you can add pork bones (remember to blanch the pork bones first before adding them to the broth for clarity). If you can find pre-boiled chicken bones at the market, you can use those for simmering the broth.
- Let the simmering chicken broth cook gently over low heat for 30 minutes to 1 hour to extract the sweetness from the bones, the fragrance from the onions and ginger. There will be a thin layer of chicken fat foam on top because local chickens have less fat. If you prefer a richer broth, you can add chicken fat to the pot.
- Season with fish sauce, salt, and MSG to taste, add a little sugar to soften the broth (use good quality fish sauce).
- Dip the pho noodles quickly in boiling water using a sieve, drain off excess water, then place in a bowl. Arrange the shredded chicken on top, sprinkle with chopped scallions, pour the hot broth into the bowl, add lime leaves for aroma. The broth should also be boiling vigorously on the stove. Serve with lime, chili, and pepper according to taste.
