2. Oil-free method for frying onions
Step 1: Before frying, peel and slice the onions into thin slices or long strands. Then sprinkle a little salt on the onions, mix well, let sit for a few minutes, then squeeze out the onion water and spread the onions thinly on clean cloth towels or a large tray to dry.
Step 2: Put oil in a pan (about 1 part onion, 2 parts oil), heat until the oil bubbles, then add the onions. Wait for the oil to return to a boil, then use chopsticks to stir constantly until the onions become crispy. When the onions are just golden, turn off the heat, but continue stirring until the onions turn golden brown, then remove the onions onto a tight mesh sieve or a slotted spoon with a bowl underneath to drain the oil.
Step 3: At this point, continue to gently stir the onions until they turn golden. When the onions have cooled slightly, place them on paper towels to absorb excess oil so the onions don't get greasy. Once the onions have cooled completely, store them in a jar for future consumption.

- If frying onions for immediate consumption, to make them crispy, you can mix 1 teaspoon of crispy fried flour with salt and sprinkle it on the onions before draining. If left for too long, the crispy fried flour will soften the onions during storage.
- Do not let the onions become too golden before removing them from the heat because the hot onions will continue cooking and quickly turn bitter, ruining the flavor of your fried onions.
