1. Essential Ingredients
0.5 kg squid tubes
150g pork
¼ onion
2-3 spring onions
2 to 3 stalks of lemongrass
Wine
20g nutmeg
Seasonings: fish sauce, salt, pepper,...
Tools needed: air fryer
2. Execution Steps:
Clean the pork belly with diluted saltwater to wash away dirt. Then, grind the meat using a grinder to achieve a smooth texture, including both meat and fat for a juicy result when grilled.
Prepare a bowl, pour the meat, sprinkle chopped spring onions, onions, finely minced herbs, and star anise. Add pepper, sugar, and fish sauce (one teaspoon each) to the meat, mix well, and let it marinate for 15 minutes.
While waiting, use wine to clean the squid, removing any fishy odor. Discard the backbone, ink sac, and teeth. Optionally, peel off the squid skin. Once the meat is marinated, use a small spoon to stuff the meat into the squid and secure the head with a toothpick.
Place a piece of paper on the air fryer tray, then put the squid on it and cover the fryer. Set the temperature to 130°C and cook for 15 minutes.
Prepare a bowl, add 1 teaspoon of oyster sauce and 1 teaspoon of sugar, stir until the sugar dissolves. After 15 minutes, open the air fryer and brush the squid with the sauce mixture. Continue cooking at 180°C for another 8 minutes. Finally, place the squid on a plate, slice into bite-sized rounds, and garnish for a delightful presentation.
