THE STEPS TO MAKE CÀ MAU CRAB HOTPOT
Step 1. Prepare the ingredients

- Clean the sea crabs, separate the claws, and remove the apron. Cut the crab body in half or quarters, remove the crab roe, and set aside in a bowl. Then arrange them into a complete crab shape and store in the refrigerator's cool compartment.
- Finely chop peeled garlic and onions, and dice the chili.

- Cut the tomatoes into wedge shapes after thoroughly washing them.
- Clean and cut cilantro and spring onions into segments.
- Wash the straw mushrooms, soak them in a diluted saltwater solution for about 10 minutes, then drain and cut them into bite-sized pieces.
- Various types of vegetables: clean, wash, and soak in a diluted saltwater solution, then lift them out onto a basket to drain.

- Slice the banana flowers, soak them in water with a bit of vinegar to whiten, and before serving, lift them onto a basket.
Step 2: Prepare the broth
- Crack the chicken eggs into a bowl, beat until smooth.

Heat cooking oil in a pot on the stove, sauté garlic and onions until fragrant. Add tomatoes and stir evenly to enhance color, then pour in coconut water and 1.5 liters of water, bringing it to a boil.
Continue by adding crab, dried shrimp, straw mushrooms, and shrimp paste to simmer for about 20 minutes. Then crack the eggs into the broth to form egg clusters. Finally, season to taste and turn off the heat.
THE FINISHED DISH OF CÀ MAU CRAB HOTPOT
- Pour the broth into the hotpot, add spring onions and cilantro, place it on the heat source (electric or gas stove), and wait for the water to boil.
- Mix a bit of salt, pepper, lime, and chili for dipping the crab and assorted vegetables.

- As the water boils, dip morning glory, water spinach, and banana flowers to blanch. With the rich, savory flavor of the broth, the creamy goodness of the crab, and the sweet and tangy taste, it's perfect to enjoy with vermicelli.
