How to Make Garlic Squid Stir-Fry:
Step 1: Preparing Fresh Squid

- Clean the fresh squid by removing the head and the ink sac. Massage the squid with ginger wine to reduce any fishy odor. - Rinse the squid under cold water multiple times to remove the scent of the wine. Cut it into bite-sized pieces and place them in a large bowl. Add broth cubes, pepper, mix well, and marinate for approximately 1 hour. - Note: You can choose between leaf squid or tube squid as per your preference. Just make sure to massage and clean thoroughly to eliminate any fishy smell.
Step 2: Preparing Spring Onions, Celery, and Shallot

- Peel the outer layer of the spring onions, wash them, and cut them into sections. - Trim the roots off the celery, wash thoroughly, and cut into short pieces, about 5cm each. - Peel the skin off the shallots and spring onions, remove the roots, wash, and cut into short segments similar to the celery. - Dice the chili peppers finely, wash and mince the ginger. Peel and finely chop the purple onion and garlic.
