Embark on a journey to Central Vietnam to learn how to make shrimp and meat mixed paste with the rich, savory flavor of vả fruit, making this simple dish irresistibly captivating.
Perhaps people in Thua Thien Hue plant vả fruit more out of habit than efficiency because vả trees have large leaves like lotus leaves, spreading wide, with each tree occupying several square meters of garden space to provide shade for an entire courtyard. However, in other regions, we can also find the presence of vả trees here and there. Mixed paste is a delicious, distinctive dish that is very popular in the central provinces. Vả fruit belongs to the citrus family, but it is larger and less bitter in taste, often used to make various dishes such as raw dishes, soups, braised fish, or mixed salads.
Ingredients:
- 5 ripe vả fruits
- Shrimp: 100 grams
- Lean pork: 100 grams
- Scallions, dried shallots
- Vietnamese coriander
- Toasted sesame seeds, peanuts
- Grilled rice paper for serving
- Seasonings: salt, sugar

How to make shrimp and pork mixed paste:
Step 1:
- Place a pot of water on the stove, add the vả fruit and boil for about 10 minutes. When the vả is cooked, you can pierce it with a chopstick. Remove the vả, peel it, and cut it into bite-sized pieces. Be careful not to overcook the vả.

- Clean the shrimp, remove the whiskers, and boil until cooked. Then peel the shrimp, and if they are large, cut them in half.
- Rinse the lean pork thoroughly, then thinly slice it into small pieces, arranging each ingredient neatly on a plate.
- Peel and finely chop the dried shallots.
- Rinse and chop the spring onions and Vietnamese coriander, discarding any wilted leaves. Step 2: - Heat a pan, sauté the dried shallots until fragrant, then add the pork and stir-fry evenly. Add the shrimp and continue stir-frying. When the meat is almost cooked, add sugar and salt to taste.
- When the pork and shrimp are cooked, add the vả fruit and stir-fry together. Cook for another 3 minutes, then add the chopped spring onions, Vietnamese coriander, toasted sesame seeds, and peanuts. Mix well and turn off the heat.

- Serve the mixed vả fruit on a plate and enjoy it with grilled rice paper and spicy dipping sauce, incredibly enticing.

Break a piece of rice paper, scoop a portion of the mixed vả fruit, dip it into the dipping sauce, and savor. The crispy rice paper combined with the chewy texture of vả fruit, the aroma of various herbs, and meat blended with flavorful dipping sauce brings a delightful and mouthwatering experience for diners.
Vả fruit is highly nutritious, providing many health benefits. It contains high levels of vitamins A, B, and minerals such as phosphorus, calcium, iron, and magnesium. Pectin, a soluble fiber in vả fruit, helps improve digestion and eliminates cholesterol buildup in the body. Due to its potassium richness, consuming vả fruit helps regulate blood sugar levels, which is beneficial for diabetic patients.
