Ingredients for approximately 6 servings:
- Choose a chicken weighing around 1.5 kg (opt for a free-range hen for tender and flavorful meat)
- 500g grated coconut
- ½ kg sweet potatoes
- ½ kg taro roots
- 1 packet of Vietnamese Indian-style curry powder
- 1 jar of curry oil
- 5 lemongrass stalks
- Purple onions: 3 bulbs
- Garlic: 1 bulb
- Turmeric powder
- Sugar, seasoning powder, salt, etc.
How to make chicken curry:
Step 1: Prepare the ingredients
- Clean the chicken, rinse with diluted saltwater, drain, and cut into bite-sized pieces. Marinate the chicken with half a packet of curry powder, curry oil, a bit of turmeric powder, sugar, seasoning powder, etc. Let it marinate for 30 minutes. Avoid using fish sauce as it may diminish the aromatic flavor of the curry powder.
- Pour warm water into grated coconut, squeeze to extract 1 cup of coconut cream separately. Continue pouring warm water, squeeze to extract 1 liter of coconut cream.
- Peel and soak sweet potatoes and taro roots in diluted saltwater, cut into large pieces, then drain.
- Crush lemongrass and tie it into a bundle.
- Finely chop garlic.
- Peel and clean the purple onions, let them dry.
Step 2: Execute the chicken curry
- Heat a pan, add cooking oil, sauté garlic until fragrant. Add the chicken and stir until the meat firms up. Transfer the chicken to a pot, lining the bottom with lemongrass.
- In the same pan, add a bit more cooking oil, sauté the remaining half of the curry powder until fragrant. Add sweet potatoes and taro roots and stir briefly. You can also fry the potatoes until golden before sautéing with the curry powder for extra aroma.
- Pour coconut milk into the chicken pot, bring it to a boil. While cooking, diligently skim off the coconut foam to avoid the curry broth looking cloudy. Boil the chicken pot until the meat is tender, then add sweet potatoes and taro roots. Season with sugar and salt to taste.
- When the potatoes are cooked, add coconut cream and the cup of coconut water separated earlier, along with peeled purple onions, to the curry pot. Wait for it to boil again, then turn off the heat.
- Ladle the curry into a bowl, garnish with fresh curry leaves or lime leaves for an appealing presentation.
