- Pork trotter meat: 500g
- Fresh bamboo shoots: 300g
- Dried shallots: 3 bulbs
- 2 chili peppers
- Spring onions, cilantro
- Seasonings: salt, bouillon cubes, pepper, MSG, fish sauce, cooking oil

Step 1: Prepare the ingredients
- Clean and shave the pork trotters. In a pot, bring water to a boil, add a tablespoon of salt and a tablespoon of white vinegar. Place the pork trotters in the boiling water for about 2 – 3 minutes from the moment it starts boiling. Then, take the pork trotters out, rinse them with cold water to remove any dirt or impurities, and check for any remaining hairs. Use tweezers to remove any remaining hairs.
- Next, marinate the pork trotters with a teaspoon of bouillon cubes, a teaspoon of salt, and half a teaspoon of pepper. Let it sit for about 15 minutes to absorb the flavors.

- Clean the fresh bamboo shoots and soak them in saltwater, remember to rinse the bamboo shoots a few more times to reduce bitterness.
- Boil the bamboo shoots in boiling water for about 5 minutes, then transfer them to cold water. Finally, drain and cut the bamboo shoots into bite-sized pieces.

- Slice the chili peppers, wash and chop the spring onions, and peel and slice the shallots.
