Steps to Prepare Indian Curry Crab
Step 1. Prepare the crab
To get the crab ready, freeze it for 1 hour.
Place the crab in a large pot of water. Cover with a lid and boil for 8 - 10 minutes. Use tongs to remove the crab from the pot.
Wash them under cool water to remove any dirt residue.
Separate the claws, joints, and crab body. Split the crab claws in half.
For the crab body, separate the apron, remove the gills and crab mustard, and cut it into 2 or 4 sections. Set aside the prepared crab.

Step 2. Prepare other ingredients
Peel and thinly slice the onions.

Clean the tomatoes and slice them thinly.

Finely grate the coconut.
Split the green bell peppers in half.
Mince garlic and ginger finely.

Soak tamarind in 1/2 cup of hot water for 10 minutes in a small bowl. Crush the tamarind to dissolve it in water. Strain the tamarind through a sieve to remove the pulp.

Step 3. Prepare the curry mixture
Put onions, tomatoes, dried red chili peppers, minced garlic and ginger, grated coconut, and all spices — cilantro powder, coriander powder, turmeric powder, and red chili powder — along with the tamarind water into a food processor and blend until smooth.
Blend the mixture thoroughly to create a smooth paste.

Step 4. Cook the crab
Heat oil in a pan over medium heat.

Add green bell peppers and the curry mixture, stir evenly for 5 minutes.

Add 3 cups of hot water and bring to a boil. Reduce heat and simmer for 10 minutes. Add salt to taste.

Place the crab pieces into the pot and simmer for another 10 minutes, then turn off the heat.

Step 5. Presentation
Serve the Crab Curry on a plate. Enjoy it hot with rice.
