PREPARING INGREDIENTS FOR SPICY SICHUAN HOT POT
FOR THE HOT POT BROTH:
- 2 tablespoons of cooking oil, 6 slices of ginger, 3-5 bay leaves, 10 cloves of garlic (peeled), 1 cinnamon stick, 5 star anise, 1 tablespoon of Sichuan peppercorns, 12 dried red chili peppers, 5g cloves
- 1 packet of spicy sour hot pot base
- 12-15 bowls of braised chicken

FOR THE DIPPING SAUCE:
- Soy sauce, satay sauce, chili oil, rice vinegar, sesame oil, sesame seeds, crushed peanuts, finely chopped cilantro, finely chopped green onions, minced garlic

FOR THE HOT POT DIPPING INGREDIENTS:
- Beef, chicken, fish, or any other meat, seafood you desire
- Assorted hot pot balls
- Tofu, tofu skin
- Noodles, vermicelli, dumplings, or pre-made wontons
- Enoki mushrooms, shiitake mushrooms, oyster mushrooms, king oyster mushrooms, button mushrooms, etc.
- Assorted greens: Chinese cabbage, spinach, bok choy, water spinach, etc.

STEPS TO MAKE SPICY SICHUAN HOT POT
1. Prepare the hot pot dipping ingredients
Prepare blanched hot pot vegetables, rinse thoroughly, drain, and place in a bowl or dish.

Clean and thinly slice beef, chicken, or fish, and arrange on a separate plate.

Soak enoki mushrooms in warm water to fully expand, trim off the roots, wash thoroughly, cut into bite-sized pieces, and arrange on a plate.
Clean and prepare various types of mushrooms, and arrange them on a plate alongside the enoki mushrooms.

Arrange tofu into bite-sized pieces on a plate.
Arrange tofu skin, noodles, vermicelli, dumplings, etc., on a plate.

2. For the hot pot broth
Heat oil in a pan, add ginger, and stir-fry. Cook for about a minute until lightly golden.

Add bay leaves, garlic, cinnamon, star anise, and cloves. Cook for an additional 2 minutes until the aroma is released.

Add peppercorns, dried chili, and the packet of spicy sour hot pot seasoning.


Simmer for another 2 minutes, then add the chicken broth. Bring to a boil and transfer to your hot pot.
3. For the dipping sauce
To make the dipping sauce, simply combine the mixture of the above ingredients.

PRESENTATION AND ENJOYMENT OF SICHUAN HOT POT



Plug in the electric stove, place the prepared broth pot on top, and bring to a boil or simmer. Arrange all your prepared ingredients around it, allowing everyone to mix their own dipping sauce and enjoy their favorite hot pot ingredients.
As the hot pot broth nears depletion, add boiling water to the pot if needed. You can also enjoy rice with the hot pot.
