To change emoji skin tones on iOS 8.3, follow these steps. Make sure your device has successfully updated to iOS 8.3, activate the emoji keyboard by going to Setting >General >Keyboard >Keyboards. If the emoji keyboard is not in the list, select Add New Keyboard below to add it.
While engaged in conversation while texting or using any chat app to insert Emoji symbols, press and hold the globe icon on the keyboard to select an emoji.
Not all emojis on the keyboard can change colors, it's only supported on human elements like faces, hands, lips... To change the color of these emojis, press and hold on the emoji, the available colors will appear, continue holding and drag your finger to the emoji you want to use to select it.
