- 450g oyster mushrooms
- 5 tablespoons vegetable oil
- 6 slices of ginger
- 8 cloves of garlic, sliced
- 1 tablespoon spicy bean sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- 5 red and green long peppers, deseeded and diagonally sliced

STEP-BY-STEP GUIDE TO MAKING SPICY OYSTER MUSHROOM STIR-FRY
Step 1. Prepare the mushrooms
Clean and pat dry the mushrooms
Cut the oyster mushrooms in half lengthwise. Place the flat side of the mushroom down and use a knife to make longitudinal incisions. The cuts should be deep but not all the way through the mushroom.
Next, make perpendicular incisions across the longitudinal cuts. Cut the mushrooms into pieces every 3cm or so.


Step 2. Fry the mushrooms
Heat up 4 tablespoons of oil in a pan over high heat. Lightly fry the mushrooms in the oil until they are golden brown on one side.
Flip and fry on the other side until golden brown. Remove the mushrooms from the oil.

Step 3. Stir-fry the mushrooms
Reduce the heat to medium-low. Add another tablespoon of oil to the pan. Sauté the ginger for 1 minute. Add the garlic and sauté for an additional 30 seconds.

Stir in the spicy bean sauce and cook for an additional 30 seconds.

Return the mushrooms to the pan along with the light soy sauce and sugar. Add the peppers to the pan and stir everything together for 2 minutes. Turn off the heat.
