The ingredients for making vegetarian spring rolls include pomelo, papaya, wild starfruit (carambola), and spices. Despite sounding simple, the preparation is intricate and time-consuming. The maker must carefully select fresh, green-skinned pomelos or slightly ripened ones, discard the bitter outer skin, leaving only the white pith, thinly slice it, blanch it in boiling water, and remove the bitterness. For starfruit, select large, ripe fruits, grind, and extract the juice. As for duck egg papaya, choose slightly ripened ones, shred into strands, and squeeze out excess water.

Combine the starfruit juice with pomelo peel, stir-fry over low heat continuously for 6 hours. If using a machine, it takes exactly half a day. Let it cool, mix shredded papaya, add spices (pepper, sugar, broth powder, chili, and coriander) and knead it into a smooth mixture. Wrap the mixture in banana leaves to form the rolls. Each finished roll is about 18cm long and weighs around 100 grams. For long-term storage, vacuum seal and keep in a cool place.
