To make the mushroom-glazed fish, you will need the following ingredients:
- Fresh fish: 1kg
- Shiitake mushrooms: 1 pack
- Button mushrooms: 10 pieces
- Coriander, spring onions, dill, tomatoes, chili
- Seasonings

Step 1
Clean the fish thoroughly, rub some alcohol all over to reduce the fishy smell. Make some cuts on the fish body for better absorption of marinade. Marinate the fish with crushed ginger, a pinch of pepper, and seasoning powder.

Cut tomatoes into wedges. Trim the stems of shiitake mushrooms, rinse thoroughly, and drain. Soak dried wood ear mushrooms until rehydrated, then cut off the tough stems, rinse again, and drain well.

Heat cooking oil in a pan over medium heat until hot. Fry the fish until golden brown on both sides, then remove and drain on paper towels.
