Twenty-three years ago, Hương Liên's Bún chả was established by Mrs. Hằng Nga and her sister Nguyễn Thị Liên on Lê Văn Hưu street, Hanoi. Despite controversies about unclean vegetables and doubts about the meat's hygiene, Hương Liên restaurant has maintained its quality. The meat is sourced from reputable and fully inspected suppliers, while the vegetables are thoroughly washed multiple times to ensure cleanliness.

When grilling the fatty meat, the crispy charred edges receive high praise, wafting with the scent of lemongrass, marinated meat enticing passersby. Hương Liên's grilled meat is rich, with the aroma of charcoal grilling, not overly dry, making it perfect with noodles. In addition to the mixed spring rolls served as a side, the restaurant is also famous for its seafood spring rolls. The seafood spring rolls are rolled into large pieces, with a crispy shell that crumbles in the mouth, filled with a rich mix of shrimp, crab, meat, spicy black pepper flavor, fragrant with a hint of onions and the savory taste of seafood.

Whether bún chả is good or bad largely depends on the dipping sauce. Because the noodles are cold, the dipping sauce is usually heated, making the noodles softer and less cold on the stomach. The dipping sauce here has a balanced sour, spicy, salty, and sweet taste, not too strong with fish sauce or overpowering with garlic. It's refreshing, perfect when paired with grilled meat, fresh vegetables, and noodles, satisfying the palate with each bite. Eating one piece only makes you want more. Therefore, it's not surprising to scroll through your Facebook newsfeed and come across someone checking in at Hương Liên's Bún chả during a hurried lunch, showering it with praises.
